Instant Pot Chicken and Dumplings Recipe

Thanks to my friend Amanda over at Guide4Moms for the idea and very simple and easy to follow directions for this chicken and dumplings recipe!! 

I used a little more ingredients in my recipe since we have 6 people to feed in our home. 

You may remember not very long ago when I received the Instant Pot and let me tell you, I absolutely LOVE it now!! It's the best thing to be made for cooking with a family and I am excited to make more things in it and will be doing blog posts with recipes as I find more to make in it. 

I haven't had chicken and dumplings in several years until I came across my friend's recipe blog post which I linked to at the beginning of my post and it looked so good that I knew I had to give it a try in my Instant Pot and see how we like it. 3 out of 6 people in our house enjoyed it. My husband and oldest daughter didn't like the dumpling part of it, but I loved it and so did two of our kids.

Ingredients to feed a family of 6 for Instant Pot Chicken and Dumplings:
- 4 lbs of chicken breasts cubed (I cut each one up into cubes)
- 2 cups of chicken broth
- 1 cup water
- 3 teaspoons of vegetable oil
- 1 pre-package of biscuits
- 2 small cans of carrots
- 1 small can of peas

How to cook it in your Instant Pot:
1. Flatten each biscuit thin where it's easy for you to cut, and then cut them into strips with a sharp knife.
2. Turn the Instant Pot onto the setting saute and pour 3 teaspoons of vegetable oil. Add chicken and cook it until brown on all sides. Stir it constantly.
3. Add 2 cups of the chicken broth, 1 cup of water, 2 cans of carrots, 1 can of peas to the cooked chicken, and mix it well.
4. Stir in the biscuits
5. Seal the lid of the Instant Pot, close the pressure knob, and set to pressure cook high for 5 minutes.
6. It could take 5 - 10 minutes for the Instant Pot to come to pressure and then you'll be able to see the time start to countdown from 5 minutes.
7. Once it's done cooking, press cancel to turn the Instant Pot off and quick release
8. Serve and enjoy a delicious meal!
